Instructions
Preheat
Preheat your oven to 375°F.
Mix dry ingredients
In a bowl, mix together the glutinous rice flour and the baking powder. Set aside.
Mix wet ingredients
In a separate bowl, whisk together the egg, coconut milk, vanilla extract, and ube extract.
Add the butter
Before adding your melted butter, make sure it's still melted but cooled so it doesn't cook the egg. Add the melted butter to the wet ingredients.
Combine & portion
Slowly mix in the dry ingredients until no lumps remain. Divide the batter evenly into 9 muffin cups. (I used a silicone mold so I wouldn't have to spray or use wrappers.)
Bake
Bake at 370°F for 12 minutes.
Finish
After removing from the oven, use a pastry brush to brush the melted butter over each one. Top with shredded coconut flakes.
These can be made without the ube extract and still taste incredible! Enjoy warm or keep on the counter for snacking.
