How to Make It
Prep
Preheat the oven to 325°F. Grease a loaf pan with butter and line it with parchment paper.
Place the banana
Split one banana down the middle lengthwise, as you would for a banana split. Place the halves seed-side down in the prepared loaf pan.
Make the caramelized sauce
In a small pan, combine the honey or maple syrup and butter over medium-high heat until just boiling. Immediately pour the sauce over the banana in the loaf pan.
Mix the wet ingredients
In a large bowl, whisk together the two mashed bananas, eggs, coconut oil, buttermilk and vanilla until well combined.
Finish the batter
In a separate bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon and salt. Slowly add the dry ingredients to the wet mixture until just combined. Be careful not to overmix. Fold in the chocolate chips or nuts, if using.
Bake
Pour the batter over the caramelized banana. Bake at 325°F for 45 minutes, or until a toothpick comes out clean. Timing may differ by location; at higher altitude, such as Colorado, baked goods may finish faster.
Cool & serve
Let the loaf cool completely. When ready to serve, flip the pan over to reveal the caramelized banana and deliciousness. Enjoy!
Use honey or maple syrup, and choose coconut oil or another neutral oil. Nuts or chocolate are optional.
