Marble Protein Banana Muffins

with Sourdough Discard, Honey & Maldon Sea Salt

How to Make Them

  1. Prep

    Preheat oven to 350°F (175°C). Grease or line a muffin pan. (I use a silicone muffin tray!)
  2. Mix wet ingredients

    Mash bananas in a large bowl. Whisk in eggs, vanilla, honey, and sourdough discard. Fold in chocolate chips.
  3. Mix dry ingredients

    In a separate bowl, whisk together protein powder, almond flour, bread flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and sea salt.
  4. Combine

    Fold dry into wet until just combined. Batter should be thick but spreadable. Add 1–2 tbsp milk if you need to loosen it slightly.
  5. Create the black cocoa marble

    Dump the black cocoa powder over the batter. Gently swirl with a knife or spatula — don't fully mix it in. You want visible dark ribbons and streaks for that gorgeous marbled effect.
  6. Fill

    Fill muffin cups all the way to the top (about 10 muffins). Add extra chocolate chips on top if desired.
  7. Bake & cool

    Bake 25 minutes, until a toothpick comes out with a few moist crumbs. Don't overbake — they're best soft and moist in the center. Cool in the pan 5–10 minutes before transferring to a rack.
  8. Finish

    While still warm, drizzle lightly with honey and sprinkle generously with Maldon sea salt flakes.
Using a metal muffin pan may bake these quicker — this recipe was tested with a silicone muffin tray.
